Red-Velvet Loaf Cake


Prep time: 20 minutes
Cook time: 1 hour approximately

What you will need: (makes 1 loaf)
* 1 1/2cups + 3tbsp Cake Flour 
* 1tsp Salt
* 1/4tsp Baking Soda
* 2tbsp Cocoa Powder
* 1/2cup + 2tbsp Unsalted Butter, softened to room temperature 
* 1 + 1/4cups Granulated Sugar 
* 3 Eggs, at room temperature 
* 3/4tsp Vanilla Extract 
* 1/2tsp Red Food Coloring liquid (1/4tsp if its gel)
* 1/2cup Buttermilk, at room temperature
* 1/2tsp White Vinegar

For the Cream Cheese Frosting:
* 8oz Cream cheese at room temperature 
* 1cup Confectioners Sugar
* 1/2tsp Vanilla Extract 



Directions:
1. Grease a loaf pan (9"x5") with cooking spray or butter, and dust it lightly with cocoa powder. Tap out excess. 

2. Pre-heat oven to 325degrees. 

3. Add cake flour, salt, baking soda, and cocoa powder to a bowl, whisk to combine, Set aside.

4. Using a stand mixer (or hand held whisk), beat the butter and sugar on high, until fluffy, and combined. Add in eggs one at a time (reduce speed to medium). Scrape the sides of the bowl as you mix.
 
5. Add in vinegar and vanilla and mix to combine. Do not overbeat. 

6. Add in the flour mixture and buttermilk (mixer on low). Alternate between dry and wet ingredients. Start with the dry and end with the dry (1/3 flour, 1/2 buttermilk, 1/3 flour, 1/2 buttermilk, and final 1/3 of flour). Do not over mix. Add in food coloring, and mix just to combine. 

7. Pour the mixture into the prepared pan. Tap the pan on the counter to remove any air bubbles. Bake at 325 degrees for 1hour. You may need 10 minutes extra - at the hour mark, depending on the individual oven temperature, check the loaf to ensure it is baked through. Baking it longer that necessary will result in a dry, dense loaf. 

8. Once ready, remove loaf from oven and let it cool while still in loaf pan. After it is semi-cooled (15-20 minutes), remove from pan and leave it to cool fully, on a wire rack. Can be stored (wrapped in saran) up to 2 days. 

9. To serve, make the cream cheese icing, whisk the cream cheese in a bowl, using an electric whisk. Once light and fluffy, add in the icing sugar, and whisk more. Add in the vanilla extract at this time. Beat well for another 2 minutes.
 
10. Once the loaf has cooled, apply the cream cheese frosting to the top of the loaf.
