Pecan Pie
Ingredients:
* Pillsbury pie dough unfrozen (easy to roll out)
* 9" pie plate
* 1cup Sugar
* 1 1/2cups Corn Syrup
* 4 Eggs
* 1/4cup Butter
* 1 1/2tsp Vanilla Extract
* 1 1/2cups Pecans chopped
* butter to grease pie pan
Directions:
1. Unroll the pie dough. Best to use a pie dish with a bottom that separates from frame. Grease pie dish and then press the pie dough into the dish. Leave excess hanging over pie plate.
2. Combine sugar and corn syrup in a pan and bring to boil for 2-3 minutes. Leave to cool.
3. In a bowl, beat the eggs. Pour the syrup mixture into eggs slowly, whisking lightly and consistently.
4. Using a strainer, strain the mixture.
5. Stir in butter and vanilla using a whisk. Gently stir in pecans.
6. Pour into crust. Bake at 350degrees.
7. Bake for 45-50 minutes until set. If there is extra crust hanging over the pan you can break it off by running a knife gently on the extra crust. Remove from pan and transfer to serving plate.
8. Serve with vanilla ice cream or whipped cream of your choice.
