Peach & Blackberry Galette

 


Prep time: 15 minutes
Bake time: 45-47 minutes 

Ingredients:
* 3 Peaches peeled, pitted and sliced
* 3/4cup Blackberries 
* 1 Roll of Puff pastry 
* 1/4cup Brown Sugar
* 2tbsp Corn Syrup
* 1/2tsp Cinnamon powder 
* 1/2tsp Nutmeg
* 2tsp Vanilla extract 
* 2tbsp Flour 
* 1 Egg, lightly beaten 
* 1tsp Water
* 2tbsp Granulated Sugar 
* 1/4cup of Jam or Jelly of your choice 

Optional: Whipped cream or Ice Cream




Directions:
1. Line a baking sheet with parchment paper. Using a cooking spray, grease the parchment paper. Roll out the puff pastry dough. Leave in the refrigerator to cool for 10 minutes while you prepare the mixture. 

2. Pre-heat oven to 350degrees. 

3. In a bowl combine the peach slices and vanilla extract. Combine gently with a rubber spatula. 

4. Add the brown sugar, corn syrup, cinnamon, nutmeg and flour and mix well. Fold in the blackberries carefully. 

5. Leaving a 2 inch border, pour the fruit mixture onto the middle of the pastry dough. 

6. Gently roll in the dough towards the center forming an outer edge/ border (pinch the dough every 1/2inch). Picture above. Leave in refrigerator to cool for 10 minutes.

7. Beat the egg and water together lightly in a bowl. Using a pastry brush, brush the dough with egg wash. Sprinkle the sugar on the pastry crust. 

8. Bake at 350degrees, for 1 hour. 

9. Once the Galette has baked, remove from oven and leave on baking sheet to cool. Don't worry if the juice spreads to baking sheet. 

10. Warm a 1/4cup of jam (this recipe used Blackberry Jam) and using a pastry brush, brush the warm jam over the fruit. The Galette is now ready to serve. Best served with whipped cream or ice cream, of your choice.
