Mini Apple Pies

 

Prep time: 20 minutes 
Cook time 15-18 minutes 
Ingredients: (makes 4 mini pies)
* 1 Box pre-made pie dough (Pillsbury) - holds 2 rolls of pie dough
* 5 Granny smith apples peeled, cored and diced 
* 2tbsp Chilled Cubed butter - 4 mini cubes 
* 3/4cup Granulated Sugar 
* 2tsp Cinnamon Powder 
* 6tbsp Flour (all purpose)
* 2tbsp Melted Unsalted Butter for brushing pastry

* Ramekins,  or Mini Pie dishes 4

Directions:
1. Pre-heat oven to 425degrees. 
2. Use some butter and grease the 4 mini pie dishes or ramekins. 
3. Unroll the pie dough, and cut out 4 pieces of dough to line the bottom of each dish. Line each dish, ensuring the dough covers the whole dish evenly. 
4. Cut out strips of dough from the remaining pieces of dough, which you will use to make a lattice pie dough top. 
5. Combine the diced granny smith apples, cinnamon, sugar and flour, and mix gently, ensuring the apples are well coated. 
6. Evenly divide the apple mixture into the 4 dishes. Place a cubed piece of butter in each dish. 
7. Cover each pie with the strips of dough, weaving it in a lattice pattern. 
8. Brush pastry well with melted butter. 
9. Bake at 425degrees for 16-18minutes - pie is done when the crust is golden/ light brown, and the apple mixture is bubbling.
10. Remove from oven, and leave to cool in the dish for 10-15 minutes. The pies can be taken out of the dishes easily once cooled for 15 minutes. 
11. Serve with ice cream of your choice.
