Macadamia Orange Cake with Orange glaze
Ingredients:
* 1 1/4cup Macadamia Nuts
* 1 Orange
* 2/3cup All Purpose Flour
* 1 1/4cup Granulated Sugar
* 1/2cup Unsalted Butter
* 1/3cup Greek Yogurt
* 3 Eggs
* 2-4tbsp Fresh squeezed orange juice
* 1cup Icing Sugar
* 6" Springform pan
* Rind of an orange - 1tsp
* Food processor
* Parchment paper & some butter to grease pan and parchment paper
1. Boil the orange in water for about 1 hour, until soft. Drain the water, and leave the orange to cool, fully. Pre heat oven to 320degrees.
2. Place the Macadamia nuts and flour in a food processor, and pulse until both become a flour-like consistency. Place the mixture in a bowl.
3. Add the granulated sugar and butter to the flour mixture and mix it using your fingers, until it resembles a crumb-like texture.
4. Once the orange has cooled, cut it up, remove any seeds, but leave the peel. Cut it up, and process it in the food processor until pureed. Set aside.
5. Whisk the eggs, yogurt and orange puree together.
6. Add the egg/yogurt mixture to the flour mixture, mixing slowly, using a wooden spoon. Do not beat or over mix.
7. Grease a 6" Springform pan, and then line it with parchment paper. Grease parchment paper as well.
8. Pour the cake mixture into the greased and lined Springform pan.
9. Bake at 350degrees for 1 hour and 35 minutes. Leave the cake in the pan to cool (out of the oven).
10. Once semi-cooled, invert cake onto wire rack to cool.
11. To make the icing glaze, combine the orange rind and icing sugar in a bowl. Add the fresh orange juice a tablespoon at a tine, whisking as you add, until it reaches the desired consistency.
12. Pour the icing glaze over the cake. You can decorate it with chopped macadamia nuts.
