Chocolate & Macadamia Skillet Cookie


Prep time: 20 minutes
Cooking time: 35 minutes 


 Ingredients:
* 3cups All Purpose Flour
* 1/4tsp Salt 
* 2tsp Baking Powder
* 1cup Unsalted Butter at room temperature 
* 1cup Granulated Sugar
* 2/3cup Light Brown Sugar (golden sugar)
* 2 Eggs + 1 egg yolk at room temperature 
* 2tsp Vanilla extract 
* 2cups Mixed Chocolate (semi-sweet & white)
* 1cup Macadamia nuts (chopped in halves)
* Cast Iron skillet (10")
* Cooking Spray for greasing skillet

Optional: Ice cream or Whipped cream. 

Directions:
1. Preheat oven to 350degrees. Grease cast-iron skillet with cooking spray. Set aside. 

2. Combine the flour, baking powder and salt together, whisk to ensure there are no lumps, and set aside. 

3. Using a stand mixer (paddle attachment), whisk the butter and two types of sugar, on medium. Scrape the sides and bottom of the bowl as needed, to ensure everything gets evenly combined. 

4. Add in eggs, and vanilla extract, beating in between additions. Take care not to overbeat. 

5. Add flour mixture, a little at a time, scraping down sides and bottom of the bowl. Add in the chocolate chips (both kinds) and mix by hand. 

6. Ladle the dough into the cast-iron skillet, using a rubber spatula, using it to even the dough and edges. Bake at 350degrees for 30-40 minutes. After 10 minutes, take the skillet out and press in the macadamia nuts into the dough in intervals. Carefully place the skillet back in the oven and bake for the remainder of the time. 
Note:  If you are using a 10' skillet you will need a tad longer baking time (maybe all 40 minutes) as the dough will be thicker in the skillet. Should you use a 12 inch cast-iron then 30 minutes should be enough. 

7. The cookie is ready when the sides are slightly brown, and the middle is puffed up. Leave the cookie in the pan, on a rack to cool for 15 minutes, prior to cutting into it. 
Note: If you want precise lines when you cut the cookie wait until it is fully cooled.  If you are using whipped topping, you will need to wait until it is fully cooled before topping it. Alternately, you can top with ice cream, while cookie is semi-warm. 

8. When ready, you can top it with whipped cream or an ice cream of your choice. Ice cream used in this recipe was Vanilla ice cream. Enjoy!!
