The Island Paradise Cake

Prep time: 15minutes
Bake time: 45minutes; Cool time: 15minutes in the pan. 
Cool completely prior to the final glaze.

This cake, made in a Bundt cake pan, combines some of the best tastes of Island life: Coconut, Rum & Pineapple! At least to me- as I come from the beautiful island of Sri Lanka! Quick and simple to make, and full of taste and texture, it is a wonderful treat to end a meal, or as an accompaniment with tea or coffee. 

Ingredients: Makes 12 servings.
For the Cake:
* 1 box white Cake mix
* 1 1/2tsp Coconut extract 
* 1 cup cooking Oil 
* 1/2cup Water
* 2 Eggs 
* 1/4cup Rum 
* 1 1/2cup Well drained crushed pineapple (from a can)

For the topping:
* 2cups Confectioners Sugar divided (1 cup + 1 cup) 
* 2tbsp Unsweetened Pineapple juice (from can)
* 1/4cup Condensed milk
* 1 1/4tsp Coconut extract (to taste)
* 1tbsp Rum
* 1/2cup Sweetened shredded coconut 

 

Directions:
1. Grease and flour a 10" Bundt cake pan. Preheat oven to 350 degrees. 
2. In a bowl combine the white cake mix, coconut extract, oil, eggs, water and rum. Using a hand mixer, beat on low for approximately 30-45 seconds. Then beat on medium speed for about 2 minutes. Once batter is smooth and combined (do not overbeat), gently stir in the crushed pineapple. 
3. Transfer the batter to the greased tube pan, and bake for about 40-45 minutes. The cake will be done when an inserted toothpick comes out clean. Let cake cool for about 15 minutes in the pan before removing it. 
4. Once removed let cake cool on a rack. 
5.  For the topping, mix 1 cup of the confectioners sugar with the pineapple juice. Brush the mixture over the warm cake, and leave to cool on a wire rack. 
6. Combine the condensed milk, with the coconut extract (to taste or 1 1/4tsp). 
7. Add the rum and remaining cup of confectioners sugar to the condensed milk mixture. Whisk well. Drizzle over the cooled cake. Sprinkle with sweetened shredded coconut.
