Strawberry Mascarpone French Toast
Ingredients:
For the Mascarpone filling:
* 8oz (230grams) Mascarpone cheese
* 2tbsp Confectioners Sugar
* 10-15 Strawberries cut into quarters
* 2tbsps Granulated Sugar
For the Dip for the Bread:
* 8 Slices of bread (brioche or a thicker bread)
* 1/8cup Buttermilk
* 4 Eggs
* 1/2tsp Cinnamon powder
* 1/2tsp Vanilla extract
* 1/4tsp Nutmeg
* 2-4tbsp Butter or Margarine (or more)
To Garnish:
* Icing sugar for garnish
* 5 Strawberries cut up into quarters for garnish
* Whipped Topping (optional)
Directions:
1. Cut the strawberries into quarters and combine it in a pan with the granulated sugar, and two tablespoons of water. Heat gently on medium heat and cook for 5-6 minutes until the natural juices of the strawberries come out. Take off heat and leave to cool.
2. Using an electric beater beat the eggs in a bowl, adding in the buttermilk, nutmeg, vanilla and cinnamon once the eggs are frothy. Pour the mixture into a larger flatter dish that will leave room for the soaking of the slices of bread. Set aside until ready to soak bread (in refrigerator if longer than a few minutes).
3. Using a stand mixer, with whisk attachment, beat the mascarpone cheese until light and fluffy (about 2 minutes). Add in icing sugar and beat for another 1 minute. Add in the cooled strawberry compote a little at a time, and whisk in between additions. Add in the compote just enough to reach a consitency of your choosing (it should not be too runny).
4. Heat a frying pan or skillet, and add the butter (1 tablespoon) to the frying pan. Ensure the heat is on medium for the first set of bread and then reduce to low for the remaining (or the bread will burn).
5. Dip the bread in the egg mixture (both sides) well, ensuring the excess egg drips off. Place the slices of bread in the pan. You should be able to place two slices at a time in the pan. Depending on the heat, let one side toast to a golden brown (light), and then using a flipper, flip for the other side to brown. If the bread is toasting too fast, reduce the heat; if the bread is not toasted flip it back so that it browns evenly on both sides. Do this for all the slices of bread.

6. Once the French toast is done, give it a few minutes to cool. You can then set up the french toast sandwich, Place one slice of french toast on a plate, top with mascarpone filling, top with another french toast.
7. Dust the top of the french toast with some icing sugar. Add on a dollop of whipped cream, and some cut strawberries. Can be served with maple syrup.
