Oreo Chocolate Mint Trifle

Serve cold. Chill in refrigerator for 1 hour minimum prior to serving.
Ingredients: Makes 6 shot-glass size desserts.
* 10-12 Oreo Mint Cookies
* 3 Oreo Mint Cookies for topping
* 1cup Heavy Cream chilled
* 4tbsp Icing Sugar
* 3/4tsp Peppermint extract
* A pinch of Green food coloring
* 2/3cup Granulated Sugar
* 1/4cup Cocoa Powder
* 3tbsp Cornstarch
* 1/4tsp Salt
* 2 1/4cups Milk
* 2tbsp Butter at room temperature
* 1tsp Vanilla Extract
* Mint leaves to garnish
Note: Optional- You can buy pre-made pudding from your local store or make the chocolate pudding ahead of time and store in container for when you are putting the dessert glasses together.
Method:
1. Crumble the 12 Oreo cookies into fine small pieces.
2. To make the pudding (ahead of time or use store bought pudding), in a pan, bring together the sugar, cocoa, cornstarch and salt; gradually stirring in the milk, over medium heat.
3. Cook over medium heat, stirring constantly and well. Boil for 1 minute, stirring consistently.
4. Remove from heat and stir in butter and vanilla. Pour into a container to cool. To prevent a skin from forming, ensure that you cover the pudding with saran wrap, placing the saran wrap directly on the pudding surface. Chill for 2 hours before using in the Oreo mint dessert.
5. In chilled bowl (chill in refrigerator for 30 minutes), whip the heavy cream using an electric beater, on medium.
6. Once soft peaks start to form, add in the icing sugar gradually, beating on high. Add in food coloring and peppermint extract and continue beating until stiff peaks form.
7. Once whipped topping is ready, spoon it into a piping bag (use 1M icing tip).
8. Spoon the pudding into another piping bag.
9. Start by layering the bottom of the glasses with some crushed mint Oreo cookie. Pipe in a dollop of the chocolate pudding, then pipe in the mint whip; repeat all three steps again. End with the mint whip, piping it in a swirl over the top of the glass.

10. Cut the Oreo cookies for garnish into halves or quarters. Add one piece to the top of each glass. Add in a sprig of mint to each glass.
11. Chill the dessert for at least an hour prior to serving (optimal 2 hours).
