Skillet Pineapple Upside Down Cake
Prep time: 20 minutes / Bake time: 45 -50 minutes
Leave to cool: 30 mins
What you will need for the Cake:
* 1/4 cup butter
* 2/3cup firmly packed brown sugar
* 9 maraschino cherries
* 2/3cup firmly packed brown sugar

* 1 can of pineapple slices (you will need 6-8 slices depending on the size of the skillet)
* 2 eggs separated
* 3/4 cup granulated sugar
* 3/4 cup all purpose flour
* pinch of salt
* 1/2tsp baking powder

What you will need for the Caramel sauce:
* 3/4cup of pineapple juice drained from can of pineapple
* 2tbsps cornstarch
* 1/4cup butter semi-melted.
* 1/2 cup firmly packed brown sugar
Putting it together:
1. Melt the butter in a 9-inch cast iron skillet; spread the brown sugar evenly over the bottom of the skillet.
2. Drain the pineapple, setting aside 1/4cup of juice, and another 3/4cup of juice, separately.
3. Arrange pineapple slices over the brown sugar, adding in a cherry in the middle of each slice. Set aside skillet (off heat).
4. Beat the egg yolks with an electric beater until thick and yellow, gradually add in the granulated sugar; beat well.
5. Heat the 1/4 cup pineapple juice over low heat, and then add to yolk mixture gradually, beating until well blended.
6. In a bowl, combine all purpose flour, salt and baking powder. Add the mixture once combined to the yolk mixture. Beating at low speeds until well blended.
7. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into the batter.
8. Spoon batter evenly over the pineapple slices. Bake at 325degrees for 45-47 minutes.
9. Invert cake onto serving plate once cake has been cooled in the skillet for 30 minutes or so.
10. Best served with a warm caramel sauce - cake can be served warm or cold.
For the Caramel Sauce:
1. Combine the cornstarch and the pineapple juice in a bowl, and mix until blended well.
2. Melt the butter on medium heat in a small sauce pan. When the butter melts, add in the brown sugar and the cornstarch mixture.
3, Stir well with a whisk, until blended, for a minute or so, on low-medium heat.
** Can be served warm with the Pineapple Upside Down Cake.**
