Strawberry Mousse

This is the easiest dessert I have ever made. What is more easier than a dessert that requires just 3 ingredients? Quick to make, simple and refreshing!

What you will need: (makes 4 small jars of strawberry mousse/ you could use smaller containers for a smaller portion per serving)
* 1lb of Strawberries
* 1/2cup of granulated sugar (you can use 3/4cup should you want it sweeter)
* 2 cups of whipping cream
* keep aside 4 -8 strawberries whole for decorating the mousse

Prep time: 20 minutes
No cooking needed.
Chill for 1 hour minimum or overnight.

Putting it together:
1. Wash strawberries well, removing leaves. Using a blender, add strawberries and sugar, and puree well. Set aside a 1/2 cup of the puree.
2. In a chilled bowl (chill the bowl in the fridge for approximately 10 minutes) add in the whipping cream, and beat (using electric beater) until soft peaks form and the cream has been whipped.
3. Fold in the remaining puree into the whipped cream (ensuring you have left aside a 1/2 cup of the puree). Take care to use gentle folding motions when working with the whipped cream, and not over stir the mousse mixture.
4. Using a small spoon evenly divide the 1/2 cup puree set aside, into the jars/containers you will be using.
5. Using a piping bag fill in the mousse mixture into each jar/container taking care not to overfill (leave a half an inch from the top of the container- to decorate with fresh berries).
6. Chill for 1 hour minimum/ or overnight. Add in either cut fresh strawberries or a whole strawberry on the top of each jar prior to serving.

Enjoy!!

Enjoy!!
