Tiramisu in a glass
A Dessert glass of Tiramisu
This traditional Italian dessert that includes mascarpone cheese and lady fingers, is an all time favorite of many. It is usually made in in a bowl or molded into a cake shape. This is a twist on the traditional tiramisu!
What you will need:
For the Biscuits:
* 1cup of brewed coffee (strong coffee or espresso)
* 24 Lady finger biscuits
* 2tbsp of Baileys Irish cream
For the creamy filling:
* 1 1/2 cup of Mascarpone cheese
* 1 1/4 cup of whipping cream
* 3tbsp of Baileys Irish cream
* 1tsp of Vanilla essence
* 3tbsp of Honey
For the topping:
* Semi-sweet chocolate shaved
* 1tsp of Cocoa powder
* Rolled cigar wafers - chocolate
Prep time: 20 minutes.
No cooking needed.
Chill overnight or for a minimum of 4 hours.
The biscuit mixture:
1. Place the lady fingers in a zip-lock bag and using a rolling pin crush the biscuits into little pieces.
2. Place the brewed coffee and Baileys Irish cream into a bowl, mix, and soak the lady fingers in the mixture.
3. Leave aside until ready to fill the cups up.
The cream filling:
4. Place the Mascarpone cheese in a chilled bowl (chill in the refrigerator for 20 minutes prior to mixing the cream filling), and beat on low (speed). Add the Baileys cream, honey and vanilla to the cheese and mix until combined.
5. In a separate bowl beat the whipping cream on medium (speed) until soft peaks begin to form.
6. Fold the whipping cream into the cheese mixture. Ensure the cream filling is well mixed, set aside.
Putting it together:
7. Add 2 teaspoons of the biscuit mixture into each glass (use clear 6oz glasses - the filling will be sufficient to fill 6 glasses).
8. Fill a piping bag with the cream filling and pipe a layer of the cream filling into each glass. Add another layer of the biscuit mixture, topping it with the cream filling.
9. Once all the glasses have been filled (3/4 of the glass), lightly dust the top of the cream filling with cocoa powder.
10. Add the semi-sweet chocolate shavings to complete the glass.
11. Finally add in the cigar wafer either on the top of the glass or in the glass, prior to serving.
